Sunday Dinner

Happy Sunday evening. 🙂

What a productive day, Carl cleaned both cars and took mine for a car wash. We both cleaned and picked up the house and then I had surprise visit from one of my best friends. It was fun to have some girl talk.

This past week I have been searching websites to find yummy gluten free recipes. I  found this yummy Sausage and Feta Stuffed Pepper recipe off of the gluten free section of the Tasty Kitchen website! 🙂

Here is what ours looked like hot out of the oven!

There are a few things that I did a little different.

Here they are:

  • 4 whole Green Bell Peppers
  • 1 pinch Salt
  • 1 pinch Black Pepper
  • 1 pound Ground Garlic And Herb Sausage (I used Jennie O Sweet Italian Turkey meat) 
  • 1 cup White Rice, Cooked
  • 2 Tablespoons Feta Cheese ( I did use feta but I would be open to using Blue Cheese or Gorgonzola cheese crumbles) I would maybe even add a little garlic. 

Preheat oven to 350 degrees F.

Rinse peppers and then cut off the tops, and remove and discard seeds. Cook ground sausage in a skillet over medium heat until browned and no longer pink. Combine all ingredients except for the peppers and cheese. Once mixed, spoon the mixture into each pepper cavity until filled. Top with feta.

Bake for about fifteen minutes until the cheese is soft and the peppers are warm, but still crisp. You might want to keep them in longer if you prefer your peppers to be a little softer.

Carl gave them a thumbs up, so I will be making these again and trying some new stuff with them!
