So last weekend we traveled northward to visit my sister and brother-in-law, always fun when we visit them. I was trying to find a yummy gluten free appetizer that the gluten eaters would like. I emailed my friends who I knew would have some ideas up their sleeves and I was right. One of my work colleagues said she makes a good Rueben Dip, that she would eat until she was sick. I decided to try that.
Rueben Dip Recipe:
1- 16 ounce can of sauerkraut
3 small packages of budding corned beef
1- 8 ounce package cream cheese
2- cups of Swiss Cheese
3 tbsp of thousand island dressing
Instructions:
Mix cream cheese, dressing, corn beef, sauerkraut, cheese and put in the microwave to melt then into the crockpot. It goes good with wheat thins, but you can bcreative in what you serve with it. I made sure my ingredients were gluten free! π
The dip was a hit. My brother-in-law made a good chili that had some kick and then Β he made wings. He had a hot wing sauce for the guys and as he would call it a ‘nancy’ sauce for the girls. π we do love him! The wings were good.
We enjoyed the day sitting by a bonfire in the snow with the warm sun! We were so full that we didn’t eat the yummy supper my sister had planned. But we did decide to eat it for breakfast, we had thick pork chops, yummy beans and pesto potatoes at 10:00am in the morning. Let’s just I actually didn’t eat the rest of the day! Lol
Anyway, it was a great weekend up north! Β π
